
How come everything is so much cuter when bite-sized?
Ingredients:
One pound cooked chicken breast, shredded
1/2 cup mayo (I used @primalkitchenfoods mayo)
1/2 cup celery, diced
1/4 tsp pepper
1/4 tsp salt
1/4 tsp dried dill
1/4 tsp dried parsley
Cooked bacon, crumbled
Cucumber, sliced
Directions:
1. Mix chicken, mayo, celery, and seasonings till well blended.
2. Spoon out chicken salad over cucumber slices. Top with bacon. Enjoy!
Hint: I threw my chicken breast in a slow cooker on low for about 4 hours. Once cooked through, I simply took my tongs and shredded the chicken and placed in the fridge to cool. You can also use any leftover shredded chicken from other recipes!
